Pancit Palabok Recipe: (Makes 6 servings): 1 pouch (57 g) Mama Sita’s Oriental Gravy (Palabok) Mix, 8 oz (227 g) bihon (rice noodles), cooked as directed in the package, 2% cups (625 mL) water or unsalted soup stock, 2 tbsp (30 ml) cooking oil, 1 tbsp (8 g) minced garlic, 1/4 cup (15 g) tinapa (smoked fish) flakes. Garnish: 2 hard boiled eggs (peeled & sliced into wedges), 3 tbsp (15 g) spring onions (chopped), 1/2 cup (100 g) shrimps (boiled & peeled), 1/4 cup (15 g) tinapa (smoked fish) flakes, 1 tbsp (15 g) fried minced garlic, 1/2 cup (30 g) crushed cracklings, 1/2 cup (100 g) squid (cooked & cut into rings). 1. Dissolve Mama Sita’s Palabok Mix in favored liquid. 2. In a wok, saute garlic & tinapa flakes in oil, then stir in dissolved Mama Sita’s Palabok Mix. 3. Bring to a boil, stirring till thick enough to coat the back of a spoon. 4. Put bihon in serving platter & pour sauce over it Garnish with eggs, spring onions, shrimps, etc. Serve with calamansi (Philippine Lemon) & patis (fish sauce).
